Filled Mini Pancakes (vegan)

I love healthy and easy breakfasts like this one. The pancakes are raffined sugar free, oil free and vegan. You can fill them with chocolate pudding, nutella or everything you want. I made them with spelt flour but you can also use a gluten-free flour mixture or almond, rice flour etc. But if you use almond or rice flour you have to add an egg or vegan flax egg or sth like that to hold the batter when you fry them in a pan.

A easy and quick recipe for filled mini pancakes.

Ingredients

  • 150 g of flour
  • 150 ml of oat milk
  • 150 ml of sparkling water
  • 1 tsp vanilla extract
  • a pinch of salt

For the filling:

  • 150 g coconut yoghurt
  • 1-2 tsp beetroot powder
  • 1-2 tsp blue spirulina

Instructions

  • Mix all ingretients togehter and let sit for about 10 minutes. In meantime mix the coconut yogurt.
  • For the yogurt mix one half with the beetroot powder and the other with the blue spirulina.
  • Bake the pancakes in a pan with little bit oil on medium heat on both sides until they´re lighty brown.
