Hey my lovelies,
Rice pudding brings back childhood memories. At least in case, I always loved to eat classic rice pudding with cinnamon and sugar or with apple compote and I create a new one with lemon and mint and it is so delicious! This rice pudding is vegan and completely rafined sugar-free. The lemon, mint and coconutmilk gives the rice pudding a fresh flavor.
Ingredients for the rice pudding:
Serves 3 rice puddings
150 g rice pudding
500 ml oat milk
200 ml coconut milk
20 g maple syrup
1 stem of mint
grated zest of 1/2 organic lemon
1/4 tsp of salt
Cook the rice, milk, coconut milk and salt in a small saucepan and let simmer for about 30 minutes. Stir occasionally. As soon as the rice is cooked, add the maple syrup. Wash the mint and chop it. Add the organic lemon zest and the mint to the rice pudding. Serve with fresh mint leaves and maple syrup.
- 150 g of rice pudding
